This stuff is bananas. A total impulse purchase at over 10 bucks a pop — but I’m so glad I threw it in the cart at Bi-Rite Market (I mean, how dangerous is that wall of jam goodness while waiting in line to check out?!).
My first inclination was to slather it all over Sunday morning pancakes. The idea was triggered by a food memory from over a decade ago, when I poured mango syrup on pancakes before surfing a wave I’ve never fully figured out: Laniakea. On the North Shore of Oahu, it’s a zippy right that’s always a little too crowded. But that day, fueled by the pancakes, I actually had fun. And ever since, I’ve craved the flavor combination. And this coconut jam was so much more than just syrup. It’s a little creamy without being heavy, fresh, satisfying.
(On a total side note, I love the name of the jam. I call my bestie Babu and she calls me Boo Bear. So there’s no way I could have resisted purchasing the stuff.)
Since trying it on pancakes, I’ve enjoyed it in my morning yogurt and even in my coffee. I bet it would be killer on gelato — especially the caramel. The jams are available through Sur La Table and other fine retailers across the US (although it looks like it’s most easily found in California). They would make a fab hostess gift — if you can bear to part with them. xx
